fun salads - and healthy too
I ordered these quail eggs to make the Japanese "bird's nest salad" that is one of our favorites. Then I found if you use the ginger dressing from that salad to marinate the drained eggs with diced or julienned beets you wind up with something that's even BETTER! These canned quail eggs are just a bit rubbery/chewy on the outside which you expect from an egg which has been cooked twice. The centers are so creamy they remind you of a really great deviled egg. I'm glad I found these eggs on Amazon because they sure aren't available in any grocery store within reasonable distance of where we live! Thanks, Amazon!

But obviously free range chickens might be a better--read healthier--option, although I doubt that even they can reasonably obtain enough nutrients to produce eggs this time of year without some kind of augmentation in the form of commercial feed. It would add some variety in nutrition, seems like a great deal (with farmers market chicken eggs averaging 7$ a dozen). The eggs come from Jumbo Coturnix, Tuxedo, Texas A&M and Golden speckeled Quail. I found an ad that had a great price 5$ for 50 eggs. We will be getting all our food from the farmers market or local farmers. Might not be all that bad considering the time of year, most places where quail reside natually--I can see them outside my window during the day--they can't be eating much in the way of insect forage and have to be subsisting on seeds and such.
