This spice is popular in Asiatic cooking and was well known in European medieval cooking. The plant Alpinia galanga (or Languas galangal) has numerous common names, including greater galangal, galangale and galang. It is also known as Siamese ginger or Laos, since the plant is indigenous to Southeast Asia, and its rhizome (root) resembles ginger in appearance and in taste. The word galangal is probably derived from the Arabic translation of its Chinese name, liang-tiang, which means "mild ginger". Like ginger, it's said to have healing properties and is used in homoeopathic remedie. HOW TO STORE: Galangal can be stored in the vegetable drawer of a refrigerator for two to three weeks. First wrap the galangal in plastic wrap or, preferably, wrap the root first in a damp cloth, then in a plastic bag. Galangal can be frozen without losing any flavor. Exellent product
I love my Galangal powder from Whole Spice, use it in many recipes instead of black pepper since I cannot have black pepper. I like the economic bulk package from Whole Spice. I keep a glass jar of the powder handy for cooking and refill it from the bag, as needed. I do keep the open bag and the jar in the fridge but you may not have to do that.

They add a distinctive citrus flavor to curries, soups, and sauces. Kaffir lime leaves are precious to many Thai dishes, from soups and salads to curries and stir-fried dishes. They are the ingredients that blend marvelously with lemon grass and limejuice in Tom Yum (Thai Spicy Soup) to give the soup its wholesome lemony essence. In soupy dishes, add the leaves whole or torn into smaller pieces, using them as one would bay leaves to flavor broth or stew. For dishes in which they are a component to be eaten, such as salads, stir-fries and dry or custard like curries, cut them in very fine needle-like slivers, so that their strong bouquet can be more evenly distributed. The slivers also provide a pleasing texture and appearance. To sliver kaffir lime leaves finely, stack three to four leaves of similar size together and slice them very thinly with a sharp knife.
