Great for gelling
I do freezer jams using agar to set them instead of pectin because it costs a lot less, and we go through a lot of jam in our household. Using agar to set the jellies means that I can use a lot less sugar and get something like a fruit spread.This is a reliable product, just be careful not to get any water in the jar, measure out what you need, then seal it back up. If you're making a recipe you usually use gelatin with, use less agar, start with half the amount called for, then increase as necessary. Agar gels up very firmly if you're not working with high acidic fruits and it's pretty stable once it's gelled even at room temperature.Recipes for kanten call for agar frequently, and agar makes a good vegan substitute for gelatin, but it's not as nutritious as gelatin. It is a decent source of dietary fiber though.I still use gelatin for some recipes, and agar for others. Agar doesn't have the faint smell that gelatin has so for a lot of desserts, it is preferable...

easy to use agar
It works as well as agar in bar form and the price is good. I do however recommend you use half the recommended amount, so more like 1 tablespoon to 1 pint of liquid versus 2 tablespoons, but you might have to experiment and it will depend on the liquid. But 2 tablespoons I find will make it too stiff.

O.k., so it's not officially kosher--but this is how you make gelatin without cow's hooves, for those of you who get grossed out by Jell-O if you think about it too much.Now foods is a company that sells gluten-free stuff, and this is no exception: if you have celiac this won't make you sick.Even better, this is powdered agar agar, not flaked agar agar. That means this will last for months, if not years--although it's also easy to use too much. 1 tablespoon of the flakes = 1/2 tsp of the powder. The ratio most cooks call for is 1 cup liquid to 1 teaspoon flaked agar agar, which means 1/4 tsp of this powder to 1 cup liquid, with more added for more acidic things like orange juice.However, agar agar doesn't gel as well as Jell-o, so don't expect to get the same results that you would for Jell-o--for that, you need Jell-o or kosher gelatin. (You can add more agar agar to add firmness; but then it starts to taste like what it is: seaweed.) Top to learn more

Awesome! This powder was bought as a media replacement for my Ant Works ant farm. I haven't tried it as a food supplement, but mixed with a little food dye, Pedialite & sugar; it worked perfectly as Ant Gel.It makes a firm gel clear that holds at room temperature. Top to learn more

I received the agar about 12 days after ordering. It comes in a slightly different bottle now, but I assume its the same agar agar as before. The bottle has a snap lid (I'm not so sure about the quality of the seal so I keep the agar agar in an airtight container just as a precaution). I dont plan on eating any of this, but I have used this successfully with mycology experiments in petri dishes (the agar is light enough to see everything well in the dish) so it works great for that. Wholesome and healthy!
I am still somewhat new to using Agar Agar, however, am extremely happy with it. Eden's Agar Agar flakes are excellent and have zero calories.There are many recipes that you can use Eden's Agar Agar with, and I encourage you to do an online search. Get creative and have fun! Personally, I have been making my own zero-calorie jello with this - except my zero calorie jello is all vegan and has no chemicals what-so-ever. I've been taking organic lemon juice (not lemonade... lemon juice), water, and liquid stevia (sometimes I choose orange liquid stevia). I mix in the agar agar flakes (as described on the back of the package) and my end result is an all-natural, zero-calorie, vegan jello dessert which is quite tasty.There is another brand of Agar Agar flakes on Amazon that has 30 calories per serving (why, I do not know), so be weary of other brands. Be sure to check out the label. The Eden brand is pure agar agar. It is fantastic and I highly recommend it. Top to learn more
Great alternative to gelatin
This was my first time using Agar agar which I discovered in a chocolate mousse recipe without eggs. This Agar Agar works perfectly at solidfifying food. It liquifies when brought to a boil for A FEW minutes and solidifies when cold. The first time I was too quick and not all the agar had disolved, leaving some unpleasant crunchy bits. So, just make sure you keep the agar agar boiled long enough so that it completely liquifies. Doing this will produce great solid mousse and jellies. It is a great product because it is really tatsteless. It only does the job of solidifying food but does not alter its taste at all. Top to learn more
